Get ready Salinas, CA! A Piece of Cake is opening their first stationary storefront tomorrow! If you’re from California’s Central Coast, you might recognize A Piece of Cake from their cool mobile cupcake truck that travels around Salinas throughout the day, and starting tomorrow you can also find them at a permanent location located in South Salinas.

Don’t worry, the truck will still be making its way around Salinas, but for those of you who don’t have time to track it down, now you have a convenient location to find delicious cupcakes right across from the Savemart on South Main.

A Piece of Cake has many things planned for the grand opening. They will be having hourly ticket raffles and a cupcake eating contest!

Cupcake Eating Contest:

Begins at 2pm. Get there before 2pm to enter. You must be present to win. Winner will receive $100!

Hourly Drawings:

Every person who visits tomorrow will get a ticket for the raffles. You don’t have to be present to win this one.

Valentine’s Day Dessert Roundup

I absolutely LOVE Pinterest! It has become an addiction. Over the past few weeks I’ve been pinning my favorite desserts and crafts for that lovey-dovey holiday that’s coming up on my Valentine’s Day board.

There are a lot of fun things on Pinterest for Valentine’s Day, and I wanted to share with you a few of my favorite desserts that I’ve come across for this holiday.

1. Of course I shared with you the 5-Minute Valentine Mug Cake a little while ago. It’s a quick and easy dessert that’s perfect for one or two people, like say, you and your special someone on Valentine’s Day!

2. Next up is Love From The Oven’s Pink Velvet Cake Pops. The cake pops are made with a pink velvet cake recipe (that’s provided on the website) and mixed with frosting to give it a malleable texture. Then they are rolled in balls, stuck on sticks with a little bit of melted candy as glue, chilled, dipped in white chocolate, and decorated with lovely sprinkles from ABC Cake Decorating Supplies.

3. Confessions of a Cookbook Queen is one of my favorite blogs to read, and I just love how her Cherry Vanilla Tuxedo Cake turned out. It’s pretty and pink with a delicious sparkly chocolate glaze over the top. Yum. Also, I dare you to leave her blog without a chuckle or two. She’s too funny.

4. In Katrina’s Kitchen has these lovely White Chocolate Infused Cookies and Cream Cupcakes for Valentine’s Day. I just love the idea of layering the red velvet cupcakes with the filling. Why haven’t I ever thought of that?

5. Another cupcake with a Valentine theme that I loved was Glorious Treats’ Sweet Heart Cupcakes. They are so cute and use the same idea as above by cutting the top off but on these you cut out a small heart with a cookie cutter on the top piece. Then you frost on the top of the bottom piece and replace the top. Head to their website for the recipes. Such a great idea! I want to thank Glorious Treats for allowing me to use their photo.

6. If a cookie is more to your style, try The Busty Baker’s Valentine Brownie Cut Out Cookies. They are tasty brownie cookies with decorative royal icing on top. She gives you many great suggestions about how to make these too!

Butter Pecan Cupcakes

My mom asked me to make her some cupcakes for her birthday recently and loved the sound of a the Butter Pecan Cake from Taste of Home. So, as any daughter would do, I set out to turn the cake recipe into cupcakes! The recipe was easy to put together, but be careful when toasting the pecans. I got sidetracked making the batter and almost burnt the pecans in the oven! So keep an eye on those and stir them regularly.

The above recipe is for a three layered cake and it ended up making about 32 cupcakes. Don’t over cook them either. I wouldn’t cook them any longer than 15 minutes if you’re going to make them into cupcakes. It might even be better to check them at 12 minutes. The cake consistency is almost of a muffin and they aren’t very sweet, which I liked, because they tasted great with the super sweet buttercream frosting I made for them.

The Butter Pecan Cake has a frosting recipe included, but I wasn’t sure if I liked the proportions in it so I opted to use one of my favorite, and easy, buttercream recipes from Savory Sweet Life. Her Classic Vanilla Buttercream Frosting is very good and added a good sweetness factor to the muffin-like cupcakes. I chose not to stir the leftover pecans into the frosting and instead sprinkled some on the top of each one as garnish.

Christmas Tree and Reindeer Cupcakes

Merry Belated Christmas!

I’m sorry I haven’t been as active on the blog lately. I blame my holiday laziness, but I did whip up some cute cupcakes this past week that I want to share with you. I hope your families had wonderful get-togethers for the holidays these past few weeks no matter what you celebrate at this time of the year!

For a Christmas party I went to this past Friday I made two cupcake decorating ideas that I’d seen floating around the internet this past month. The first were these cute reindeer cupcakes:

And the others were these Christmas Tree cupcakes:

Both were fairly easy to make but took a long time to put together. For the less experienced decorator, I’d suggest the reindeer ones. I think even kids could put these together. The supplies you’d need to make these are a cupcake (made from scratch or boxed mix), chocolate frosting, Nila wafers, round candies in white, brown and red (I used peanut butter M&Ms for the brown and red noses and white coconut M&Ms for the eyes), black gel frosting for the eye pupils, and pretzels. If I were to do this one again I’d chose smaller pretzels. It’s probably pretty self explanatory by looking at the pictures how to construct them, but I’ll give a quick run down of how I put them together anyway.

First frost the cupcake and put the Nila wafer on near the bottom of one side of the cupcake, then use some frosting to attach the nose. Next shove the pretzels into the frosting near the top, almost to where they meet with the cookie. It was hard to keep the pretzels from slumping over that’s why I put them so far down on the face. If you use smaller pretzels, this may not be necessary. Then attach the eyes with more frosting near the top of the cookie. Unless you want them to be blind reindeer, add a little black pupil to each eyeball with the gel frosting.

For a little more of a challenge I made these Christmas tree cupcakes as well. These ones require a little bit of frosting technique and frosting tips.  Start with a cupcake frosted with white frosting. For the structure of the tree place an ice cream sugar cone upside-down on the white frosting. Then make some green frosting and pipe it on using a closed star tip. Just rest the tip near the ice cream cone and then pull outward as you push the frosting out to make it look like the branchy peaks on the tree.

For decorating the tree you can do a wide variety of things! Some ideas are chocolate covered sunflower seeds, sprinkles, small candies like mini M&Ms, etc. I used some light blue pearl candy sprinkles I had on hand but the decorations are limitless.  You could even try  to find a star shaped candy as a tree topper.

My Little Cupcake Cake Pop Molds + Giveaway!

I’ve only made cake pops once and found them to be a little difficult to shape and decorate but the folks at My Little Cupcake have created a set of molds that help in the production of cake pops. It all started with the cupcake cake pop mold:

This little mold forms the cutest cupcake shaped pops ever allowing for unique cake pops that are not just sphere shaped. Recently they added three other mold shapes to their shop: cone (perfect for Christmas trees), sphere (if you want to make perfectly formed traditional cake pops), and heart (great for heart shapes, but I’ve seen it used for Reindeer as well!).

For the cake pop filling, My Little Cupcake uses a non-bake method using Oreos and cream cheese (also known as Oreo truffles) but you can also use the Bakerella method of baking a cake and crumbling it up with frosting for the moist cake filling. Either way will work.

Fluff Cupcakery Grand Opening

If you live near California’s Central Coast, make sure to stop by Fluff Cupcakery in Salinas, CA while you’re out holiday shopping this weekend. Fluff Cupcakes has been a local favorite in farmers markets in the area, but starting tomorrow, Fluff Cupcakes will be all settled in its new store front in Downtown Salinas. It will celebrate its grand opening by offering all of Salinas’s favorite flavors and a few new holiday ones.

I had the pleasure of trying out many of Fluff Cupcake’s flavors at my brother’s wedding a couple of months ago and haven’t had a cupcake that I didn’t like. They are seriously good.
